Deanne Hall-Habeeb’s Spicy Wild Rice Salad

2 c wild rice blend

2 tb veg. oil

2 onions, cut into wedges

1 ts ground cumin

½ ts cinnamon

¼ ts ground cloves

¼ ts ground ginger

2 carrots thinly sliced

1 ts honey

2 oranges, segmented

3 oz pistachios, toasted & chopped

3 oz raisins

2 oz flaked almonds, toasted

3 spring onions, sliced

3 ts fresh dill, chopped

Orange Mustard Dressing: 

1 ts Dijon mustard

½ c olive oil

¼ c orange juice

1 tb red wine vinegar

  1. Cook rice in boiling water as per instructions
  2. Drain well and cool
  3. Heat oil, add onion,cumin, cinn, cloves and ginger and cook while stirring until onions are slightly caramelized.
  4. Add carrots and cook until tender.
  5.  Stir in honey.
  6. remove from heat and cool slightly

Place all ingredients in a bowl, except for dressing.                   Wisk together dressing ingredients and pour over salad.
